Love a good dessert! When I was a kid I was having fun trying out making desserts. I was never that into creating the main dish but I\u2019ve tried to learn some basic cooking since it\u2019s cheaper to do some things yourself. Still, my job experties are more on a technical side \u2013 I’m certainly not a chef. But it cheers me up when whatever it is I\u2019m making works out! This time I fell in love with matcha pudding.

Here’s what I used<\/em><\/figcaption><\/figure>\n\n\n\n

Matcha pudding<\/strong><\/h3>\n\n\n\n

So the ratio that worked out for (per serving) me was:<\/strong>
– 2 tablespoon chia seeds
– 4 tablespoon vanilla dressing mix
– 1 teaspoon matcha powder
– 1,5 dl coconut milk<\/p>\n\n\n\n

I added dry ingredients first, mixed them together and then poured the coconut milk in. Gave it a good stir and to the fridge it goes!<\/p>\n\n\n\n

The vanilla dressing mix I had at hand had corn starch ratio of around 1\/4. So if someone wants to try this with corn starch and vanilla extract or real vanilla instead of dressing mix: use 1 teaspoon of corn starch and adjust the sweetness by tasting.<\/em><\/p>\n\n\n\n

Taste combination is pretty much like matcha latte so honey is also an option for a sweetener.

Looking for inspiration<\/strong><\/h3>\n\n\n\n

While looking up dessert ideas I also remembered that pumpkin pulp and dark chocolate chips are a great flavor combo in cookies. Since I didn\u2019t find pumpkin powder and fresh pumpkins looked pricey I bought pumpkin cubes. I sliced them up to smaller bits and dried those. So many possibilities that I wanna try with pumpkin flavor. Maybe coffee drinks would be a nice place to start. I\u2019m not going to start every morning with a sugary latte but I mean \u2013 it\u2019s nice to do that sometimes. Cutting some slack after a week on a Saturday morning.. You know what I mean.<\/p>\n\n\n

Another thing I want to explore is making juice. I can\u2019t get my hands on ready-made white grapefruit juice around here but there are sometimes white grapefruits seasonally avaible. So the only option for getting the juice is to buy fruits and make some. And that\u2019s what I did last summer. I also made juice with oranges and red grapefruits using 50\/50 ratio. And self-made ginger shots on orange juice according to the recipe I found online.<\/p>\n\n\n\n

I don\u2019t usually add sugar on juices I make and they aren\u2019t very sweet. But I\u2019m thinking maybe I should experiment combining juices from different fruits and vegetables to make them more into people-pleasers. I personally like to remove most of the pulp from the juice by straining. This time I made just plain red grapefruit juice since they were on sale.

Would love to learn how to make healthier dessert options too and am looking for inspiration online at the moment. If I end up with something that works for me I might share it on this blog later on. Maybe something that doesn’t contain caffeine. It’s best that I leave the rest of the pudding for the next morning.
